Chicken breast with apple and curry dressing

For 4 people

200 g grilled chicken breast
½ small red onion
1 spring onion
1–2 tsp curry powder (according to taste)
0.5 dl mayonnaise
½ green apple
4 rashers of pancetta or bacon
Leaf parsley to garnish
4 thin slices of Malax Loaf

Slice the apple and finely chop the red onion and spring onion. Mix the apple and onions with the mayonnaise and season with curry powder and a pinch of salt. The mixture should not be too runny. Fry the pancetta until crisp and leave to rest on paper towels. Slice the chicken and arrange it on top of the Malax Loaf slices. Spoon the mayonnaise mixture on top of the chicken and add the parsley and rashers of pancetta.
