Ham and beetroot salad

For 4 people 

200 g good-quality ham
2 gherkins
Bunch of curly-leaf parsley
Neutral oil for frying
4 beetroots
0.5 dl crème fraîche
0.5 dl mayonnaise
1 tbsp Dijon mustard
½ yellow onion
½ red apple
Salt and pepper
4 thin slices of Malax Loaf
Cook and drain the beetroots. Dice the beetroots and cut the apple into slightly larger pieces. Chop the onion. Mix the mayonnaise, crème fraîche and mustard. Mix everything together and season with salt and pepper.
Fry the parsley for a few minutes and drain on a paper towel. Arrange the ham on top of the Malax Loaf slices and garnish with the beetroot salad, thinly sliced gherkins and fried parsley.
‘This dish is best served with an ice-cold schnapps and pale lager.
It is a combination that is difficult to beat.’
